    • Marinated artichokes
    • Black olives
    • Red onion
    • Tomatoes
    • Garlic
    • Fresh basil

    Making the salsa is easy; just follow these simple steps below.

    Step 1 - Chop artichokes and add to bowl along with the marinade from the jar

    Hint: You can serve this right away, but it's even better if you stash it in the fridge for a few hours to let the flavors all combine.

    The great thing about this recipe is that you don't need any special equipment at all! Just a knife for mincing and dicing, and a bowl for mixing and storage.

    You can store this in the refrigerator for up to 3-4 days. The canned/jar ingredients will last longer, but the fresh basil and tomatoes will perish sooner. So if you're unsure, take a good look at the tomatoes to see if you think it's still edible.

    I have not tried freezing it, but I suspect it might be mushy upon thawing. It's so easy to make, and the quantity is fairly small, so you might not need to ever freeze any,

    Our chunky artichoke salsa is a break from tradition. It's a delicious and fun surprise for yourself, your family, or guests. It has all the punch and pizzazz of regular salsa, and you can enjoy it in much the same way as you do any other salsa.

    Ingredients

    • 1 6.5 ounce jar of marinated artichokes
    • ¼ cup black olives
    • 2 tablespoons red onion chopped
    • 2-3 tomatoes chopped
    • 1 clove garlic minced
    • 2 tablespoons fresh basil snipped
    • salt to taste
    • black pepper to taste

    Instructions

    • Por the marinade from the jar of artichokes into a medium bowl, then chop the remaining artichokes.

    • Combine all ingredients to the bowl with the marinade, and mix gently.
      ¼ cup black olives, 2 tablespoons red onion, 2-3 tomatoes, 1 clove garlic, 2 tablespoons fresh basil
    • Add salt and pepper to taste.

      Interesting! I don't think I'd use it instead of salsa, but it makes a dip that is a nice change.
