If you're looking for a way to take your grilled cheese sandwich to the next level, this recipe is a great option. The combination of crispy bacon, creamy avocado, and melted Monterey Jack cheese adds extra flavor and texture to a classic favorite. Plus, it’s easy to make at home with just a few simple ingredients and a frying pan. Whether you’re craving a comforting lunch or a quick snack, this gooey grilled cheese will hit the spot.
Ingredients
To make this delicious grilled cheese sandwich, you’ll need the following ingredients:
- White bread (or your bread of choice) – A classic choice for grilled cheese, but feel free to use any bread you prefer, like sourdough or whole wheat, for a different twist.
- Bacon – Bacon adds a savory crunch and rich flavor that pairs perfectly with the creamy cheese and avocado.
- Ripe avocados – The creamy texture of avocado adds a fresh, smooth contrast to the crispy bacon and melted cheese.
- Monterey Jack cheese (or your choice of cheese) – Monterey Jack has a mild, creamy flavor that melts beautifully, but you can swap it for any cheese you like, such as cheddar or Swiss.
- butter – Butter is essential for achieving that perfectly golden and crispy bread. If you prefer, you can substitute margarine or another spread of your choice.

Instructions
Here is how to make this hearty, gooey sandwich:
Cook the Bacon
Start by cooking your bacon to crispy perfection. You can use any method you prefer, but for a quick option, the microwave works wonders. Layer two paper towels on a microwave-safe plate, arrange the bacon in a single layer, and cover with two more paper towels. Microwave for 3-4 minutes, then check for crispiness. Continue cooking in 30-second intervals if needed. Once done, set the bacon aside on a clean paper towel to drain excess grease.
Prepare the Avocado
While the bacon cooks, cut your avocado in half and remove the pit. Slice one half into thin, even slices. Set them aside for assembling your sandwich later.
Butter the Bread
Spread a thin layer of butter on one side of each slice of bread. This will give your sandwich a perfectly golden and crispy exterior.
Preheat the Skillet
Heat a skillet over medium heat on your stovetop. Make sure the pan is hot before adding your sandwich to ensure even cooking.
Assemble the Sandwich
Place the buttered side of each bread slice down on the skillet. Immediately add a slice of cheese on top of each piece. On one slice, layer the cooked bacon, and on the other, arrange the avocado slices. This ensures every bite will be loaded with flavor.
Cook Until Golden
Let the bread cook for 3-4 minutes or until the bottom side turns golden brown and the cheese begins to melt. Be patient and keep the heat at medium to avoid burning the bread.
Combine and Flip
Carefully flip the bacon-topped bread onto the avocado-topped slice, creating a sandwich. Use a spatula to gently press it down, helping the melted cheese glue everything together.
Cool and Serve
Once the bread is perfectly browned and crispy on both sides, remove the sandwich from the skillet. Let it cool slightly for easier slicing, then cut in half and serve immediately.
Substitutions
It's super easy to customize this recipe to your tastes. I like the spiciness of pepper jack cheese, but you can use plain Monterey Jack cheese, or cheddar, provolone, or Swiss. It's totally up to you.
White bread is a staple, but if you prefer brown bread, whole wheat, or even sourdough bread: go for it! Or put on your fancy hat and find some delicious artisan bread.
How to Enjoy
For the best results, make this sandwich just before you plan to eat it. The classic accompaniment is a delicious bowl of tomato soup. Or maybe dip it in a spicy salsa cremosa!

Equipment
You don't need anything special for this recipe; just a frying pan and a spatula for checking the undersides of the bread. If you prefer, you could also make this on a panini maker.
Storage
Don't bother! If you try to store this, the slices of bread won't stay crispy and the cheese won't stay melty. Your best bet is to eat it right away! That said, if you find that your eyes are bigger than your stomach and you only want to eat half, you can put the other half in the refrigerator in a sealed container. I wouldn't try to store it for more than a day.

Being snowing at our place for a few days now...made these yesterday with a soup on your site as well and my whole family's spirit was collectively raised (probably their cholesterol too, but comfort food is comfort food!)
