Cook bacon per your desired method. For sandwiches, I usually cook bacon in the microwave. To do that, I put down two paper towels on a microwave-safe plate, then add the bacon in a single layer, then cover with two more paper towels. Microwave for 3-4 minutes. If still translucent or not crispy enough, continue to cook in additional 30-second intervals.
3 slices bacon
Cut the ½ avocado into thin slices.
½ avocado
Heat a skillet over medium heat on your stovetop.
Butter one side of each slice of bread.
2 slices white bread, 1 tablespoon butter
Assemble the sandwich: Place both pieces of bread, butter side down, in the pan. Add a slice of cheese to each one. Then top once slice with the cooked bacon, and the other slice with the avocado.
2 slices white bread, 3 slices bacon, 2 slices Monterey jack cheese, ½ avocado
Cook for 3-4 minutes or until the bottom side of the bread is browned.
Carefully flip the bread with the bacon over and lay it on top of the avocados. The melted cheese should help the two sides stick together.
Remove from heat, allow to cool as needed, then slice and enjoy!
