This shrimp pasta salad recipe is perfect for any time of year. It’s hearty enough for colder weather, but the citrus and Greek flavorings really make it a perfect dish for summer, too.
Ingredients
Pasta of your choice (ditalini, rotini, etc)
Shrimp
Cherry tomatoes
Lemon
Greek seasoning
Light extra virgin olive oil
Mayonnaise

Cook the pasta according to directions, then drain in a colander and rinse.

Chop up cooked shrimp and tomatoes, and add to pasta. Stir to combine.

Grate the peel of lemon over the combined shrimp, tomatoes, and pasta

In a small bowl, add the juice of the lemon Greek seasoning, olive oil, and mayonnaise. Whisk to combine.
